Fabbioli
Cellars
Doug Fabbioli, the talented winemaker and consultant winemaker
to several Virginia wineries is now making his own estate bottled
wine under the Fabbioli Cellars label.

Cellars 2004 Tre Sorélle Rating: 90
The 2004 Sorélle is a delicious medium-bodied Bordeaux
blend with a predominance of Merlot. It has a red garnet color,
an attractive nose of black cherry, green olive and anise, and
a fruit rich mid palate of black cherries and black currants
that has texture and depth with fine-grained tannins and a solid
finish. This first bottling is a promising start for Fabbioli
Cellars and we look forward to future wines.

in your Rasberry Merlot. It was introduced to me by a friend.
The bottle suggested serving with chocolate. I cut a chocolate
Klondik bar into 4 cubes and poured 2 ounces of the Rasberry Merlot
over it and served it in a shallow cup with a spoon. It was a

setting is beautiful, the owners fun and enthusiastic, and the
wine is good. (Really!!!) I was surprised at how much I liked
some of the Fabbioli reds and their raspberry dessert wine was
wonderful. I really had never liked a Virginia red before and

red in Virginia. (Hey, after living in California near "Sideways"
